  • 700 g chicken breast fillets Use fresh for best flavor
  • 1 whole onion Peeled and finely chopped
  • 2 tablespoons strong mustard or whole grain mustard Adjust according to your taste
  • 30 cl liquid cream Substitute with half-and-half for lighter sauce
  • 12 cl dry white wine Can substitute with chicken broth
  • 1 tablespoon olive oil For sautéing
  • 1 tablespoon chopped chives For garnish
  • Salt To taste
  • Pepper To taste

Method
 

Preparation
  1. Gather all your ingredients: chicken fillets, onion, mustard, cream, white wine, olive oil, chives, salt, and pepper.
Cooking
  1. Slice the chicken fillets into thin strips.
  2. Peel and finely chop the onion.
  3. Heat olive oil in a large sauté pan over medium heat and sauté the chopped onion until translucent (about 3-5 minutes).
  4. Add the sliced chicken to the pan and cook until lightly browned on both sides.
  5. Pour in the dry white wine and let it reduce for a few minutes.
  6. Add the liquid cream and mustard, stir well, and season with salt and pepper.
  7. Reduce heat to low and let simmer for 15-20 minutes to thicken.
  8. Sprinkle the chopped chives on top before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat slowly to prevent sauce from separating. Can also be served over rice, mashed potatoes, or pasta.
