Preparation
- Preheat your oven to 350°F (175°C) and grease and flour a cake pan.
- In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the grated coconut and milk.
- In a separate bowl, whisk together the flour and baking powder. Gradually add this to the wet mixture, mixing until just combined.
- Pour half of the batter into the prepared cake pan. Spread the jam on top, then pour the remaining batter over the jam.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Let it cool before serving.
Notes
Store in an airtight container at room temperature for 2-3 days or freeze individual slices wrapped in plastic for up to three months. Pair with Greek yogurt or honey for added flavor and nutrition.
