  • 125 g unsalted butter, softened
  • 100 g powdered sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream the softened butter and powdered sugar together until light and fluffy.
  3. Add the egg yolk and vanilla extract, mixing until well combined.
  4. In another bowl, sift together the flour, ground cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  6. Roll the dough into small balls and flatten them slightly, placing them on a baking sheet lined with parchment paper.
  7. Top each cookie with chopped nuts if using.
  8. Bake for 12-15 minutes or until the edges are lightly golden.
  9. Allow to cool before serving.
