  • 200 g feta cheese Crumble before mixing
  • 2 tablespoons zaatar Earthy spice blend
  • 200 g phyllo pastry For wrapping the filling
  • 2 tablespoons olive oil For brushing on phyllo
  • Salt and pepper to taste For seasoning
  • Sesame seeds (optional) For added texture
  • Fresh parsley for garnish (optional) For decoration

Method
 

Preparation
  1. Preheat the oven to 180°C (350°F). Heat ensures the briouates turn golden brown and crispy.
  2. In a mixing bowl, crumble the feta cheese and mix it with zaatar, salt, and pepper.
  3. Take one sheet of phyllo pastry and brush it lightly with olive oil.
  4. Place a spoonful of the feta mixture at one end of the pastry sheet.
  5. Fold the sides over the filling and roll it up into a triangle shape.
  6. Repeat with the remaining pastry and filling.
  7. Place the rolled briouates on a baking sheet lined with parchment paper.
  8. Brush the tops with olive oil and sprinkle with sesame seeds if using.
Baking
  1. Bake for about 20-25 minutes or until golden brown.
  2. Serve hot, garnished with fresh parsley if desired.

Notes

These briouates can be served warm, paired with a fresh salad or yogurt for dipping. For meal prep, they can be cooked in advance and stored.
