Preparation
- Preheat the oven to 180°C (350°F). Heat ensures the briouates turn golden brown and crispy.
- In a mixing bowl, crumble the feta cheese and mix it with zaatar, salt, and pepper.
- Take one sheet of phyllo pastry and brush it lightly with olive oil.
- Place a spoonful of the feta mixture at one end of the pastry sheet.
- Fold the sides over the filling and roll it up into a triangle shape.
- Repeat with the remaining pastry and filling.
- Place the rolled briouates on a baking sheet lined with parchment paper.
- Brush the tops with olive oil and sprinkle with sesame seeds if using.
Baking
- Bake for about 20-25 minutes or until golden brown.
- Serve hot, garnished with fresh parsley if desired.
Notes
These briouates can be served warm, paired with a fresh salad or yogurt for dipping. For meal prep, they can be cooked in advance and stored.
