Main Ingredients
  • 450 g zucchini Washed and chopped.
  • 450 g eggplant Washed and chopped.
  • 3 pieces red bell peppers Washed and chopped.
  • 4 pieces tomatoes Washed and chopped.
  • 3 pieces onions Washed and chopped.
  • 3 cloves garlic Minced.
Cooking Essentials
  • 2 tablespoons olive oil For sautéing.
  • 100 ml water To add moisture.
  • to taste Salt and pepper Adjust based on preference.
  • to taste Herbs of your choice (basil, herbes de Provence, or bouquet garni) For flavoring.

Method
 

Preparation
  1. Wash and chop the zucchini, eggplant, red bell peppers, tomatoes, onions, and garlic into small cubes.
Cooking
  1. Turn on the Cookeo and select the 'browning' mode. Add olive oil and let it heat.
  2. Add the chopped onions to the pot and sauté until soft and translucent.
  3. Add the remaining chopped vegetables to the pot, mixing well with the onions.
  4. Pour in water, then season with salt and pepper. Add chosen herbs.
  5. Close the lid of the Cookeo and start pressure cooking for 10 minutes.
  6. Once cooking is complete, carefully release the pressure and serve your ratatouille hot.

Notes

Ratatouille can be served hot as a main dish or a side. It can be enjoyed with rice, couscous, or grilled meats. Leftovers can be refrigerated or frozen for later use.
