Method
Preparation of Dough
- In a bowl, mix the flour, water, and salt to form a smooth dough. Knead for a few minutes until elastic.
- Cover the dough with a cloth and let it rest for 30 minutes.
Preparation of Filling
- In a pan, heat olive oil and sauté the onion until translucent.
- Add chopped spinach and peas, cooking until the spinach wilts.
- Remove from heat and mix in the crumbled feta cheese; season with black pepper to taste.
Assembly and Cooking
- Divide the dough into equal portions and roll out each piece into a thin circle.
- Place a portion of the spinach and cheese mixture on one half of the circle and fold the other half over.
- Press the edges to seal.
- Cook on a preheated skillet over medium heat for about 3-4 minutes on each side until golden brown. Serve hot.
Notes
Serve warm with a squeeze of fresh lemon juice. For a balanced meal, consider serving with a side salad or yogurt dip. Gozleme can be stored in an airtight container for up to 3 days in the refrigerator or frozen for up to 3 months.
