  • 4 sheets brick pastry
  • 1 can tuna, drained
  • 2 pieces eggs
  • 1 small onion, finely chopped
  • 1 tablespoon olive oil
  • to taste Salt
  • to taste pepper
  • to taste Fresh parsley, chopped (optional)

Method
 

Preparation
  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat the olive oil over medium heat and sauté the chopped onion until soft.
  3. In a bowl, mix the drained tuna, sautéed onion, and season with salt, pepper, and parsley.
  4. Take a sheet of brick pastry, place a spoonful of the tuna mixture in the center, and crack an egg on top.
  5. Fold the pastry over to create a parcel, sealing the edges.
  6. Repeat with the remaining sheets and filling.
Baking
  1. Place the parcels on a baking sheet and bake for 15-20 minutes, or until golden and crispy.
Serving
  1. Serve hot as a balanced meal on its own or with a fresh salad for added fiber.

Notes

For storage, allow leftovers to cool completely, then store in an airtight container. Refrigerate for 3-4 days or freeze for longer. Optionally serve with steamed vegetables for added nutrients.
